As many clone owners discovered, all of the authorized clones ran Mac OS 8 just fine. There are clone users who are running Mac OS 9 on their old computers, and some are even running hacked versions of OS X. The disk has an operating system (macOS Big Sur), and user data (apps, etc). And since you only have one disk, this is your startup disk: all 500GB. A Mac with two disks will have the storage divided between them. The Mac drive with the OS on it is the startup disk while the other drive is just used for storage of files.

Debug Menu
A debug menu can be enabled by setting the MBC_DEBUG environmental variable and running the app. This menu is only enabled when the variable is set, so it will not last across new sessions without the variable. An example would be the following being run in a terminal:
